Impossible Vegetable Pie
- 2 cups chopped broccoli or cauliflower, or a combination
- 1/2 cup chopped onion
- 1/2 cup green bell pepper or red bell pepper
- 1 cup shredded cheddar cheese
- 1 1/2 cups milk
- 3/4 cup Bisquick
- 3 large eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Heat oven to 400°. Lightly grease pie plate ( I use my deep dish pie pan ).
- In a saucepan, bring about 1 inch of salted water to a boil (about 1/2 teaspoon salt to each 1 cup water).
- Cook broccoli and/or cauliflower until tender; drain well.
- Combine broccoli, onion, green pepper, and cheese in the pie plate.
- Process remaining ingredients on high speed of blender for 15 seconds, or until smooth.
- Pour mixture into pie plate. Bake 35 to 40 minutes or until golden brown and knife comes out clean.
- Let stand 5 minutes before serving. Garnish as desired. Refrigerate any remaining vegetable pie.
