Summer Peach Pie
This is a simple peach pie that is really easy to make. In a crunch, I usually just use pre-made dough and canned peaches. I just slowly add the brown sugar.
Ingredients:
1 double pie crust recipe
4 cups of peaches (or 3 cans with light syrup, drained)
1/3 cup brown sugar
1 Tbsp. quick-cooking tapioca
Preheat oven to 350°. In a medium to large bowl, mix peaches, sugar and tapioca. Set aside.
Roll out crust. Place bottom crust in your pie pan, fill with peach mixture, cover with top crust. Fold edges over and crimp. Cut silts in the top of ventilation.
Bake until well browned, about 1 hour (if it begins to over brown, just cover the top with foil). Let sit until room temperature, about 3 hours.
