There are many ways to create a perfect pie for a special occasion.

For birthdays, if you are considering a double crust pie, such as a cherry pie or apple pie. For a personalized affect, set aside few tablespoons of dough.

Over the entire recipe, these few tablespoons will not be missed.

Roll the small amount of dough flat and cut out the letters for the special occasion with a knife. (It might help to print the letters first in a large font on paper, cut them out and use them as a guide.

Brush the individual letters with egg whites and sprinkle sugar over them. Then brush the top layer of dough on your pre-cooked pie and place the letters.

The pie will cook a beautiful golden brown, and the sugar coated letters will shimmer and stand out.

Another option would be to use a soda lid to cut out circles and draw out the letter with a knife or toothpick. Follow the same egg white/sugar combination mentioned above as a shiny option.

For pies that need holes to breath during the cooking process - try using a classic cookie cutter design over the top.

For fall themed pies, layering leaf cutouts or pumpkins is a beautiful touch. Stars and stripes on the Fourth of July give a patriotic feel. You can also use bunny cutouts at Easter, and ghosts at Halloween.
