Asparagus Quiche Recipe



Try this asparagus quiche recipe for your next family dinner.

  • 1/2 to 3/4 pound asparagus, trimmed, chopped

  • water

  • 2 tablespoons butter

  • 1/2 cup chopped mushrooms

  • 4 green onions, with green, thinly sliced

  • 1 small tomato, peeled, seeded, diced

  • 1 1/2 cups shredded Havarti cheese or Swiss, about 6 ounces

  • 4 large eggs

  • 1 1/2 cups half-and-half or whole milk

  • 1/2 teaspoon salt

  • 1/8 teaspoon ground black pepper

  • dash nutmeg

In a saucepan, cover asparagus with water. Bring to a boil over high heat; reduce heat, cover, and cook for 5 minutes. Drain and set aside. In a skillet, heat butter over medium-low heat; add mushrooms. Saute until mushrooms are tender; add green onions and cook for 1 minute longer. Set aside. Line a 9-inch or 10-inch pie plate with pastry; bake at 375° for 8 minutes. Remove from oven and reduce oven temperature to 350°. Arrange vegetables and shredded cheese in pie pastry. Whisk together the eggs and half-and-half; add salt, pepper, and nutmeg. Pour egg mixture over the vegetables. Place the filled pie shell on a large cookie sheet or jelly-roll pan. Place in the oven and cook for 45 to 55 minutes, or until a knife inserted in the center comes out clean.

Brie Tarts



Brie Tart Recipe:

  • 2 tablespoons whipping cream
  • 1/2 pound brie cheese
  • 2 egg
  • 1 teaspoon ground ginger
  • 1 teaspoon powdered sugar
  • 1/2 teaspoon ground turmeric
  • 1/8 teaspoon salt
  • 1/4 teaspoon freshly ground white pepper
  • 1 pie shell

Make the PIE DOUGH, roll out and place in an 8 inch pie pan; bake in a pre-heated 425 degree oven for 10 minutes. Remove all the rind from the Brie; cube. In a double boiler, slowly melt Brie. Add the rest of the ingredients, stirring frequently. Pour the cheese mixture into the pie shell and bake at 375 degrees for 30 minutes, or until lightly browned. Serve hot or cold.

Cheeseburger Pie Recipe

1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs

Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate. Bake about 25 minutes or until knife inserted in center comes out clean. High Altitude (3500-6500 ft): Bake 30 to 35 minutes.

Cherry Tomato Tarts

About 9 oz puff pastry14 oz cherry tomatoes
3 garlic cloves
2 Tbsp olive oil
1 Tbsp mustard à l'ancienne
3.5 oz fresh goat cheese
1 egg
1 Tbsp sage leaves, chopped
1 Tbsp parsley leaves, chopped
1 Tbsp mint leaves, chopped
A few black olives
1 tsp fine sugar
1 Tbsp pine nuts

Roll the dough and place it in the mold. Make holes with a fork and place in the fridge for 30 mns. Preheat your oven at 420 F and precook your tart for 10 mns. Remove and let cool slightly. Slice your tomatoes in halves. Heat 2 Tbsp olive oil in a non-stick frying pan and when hot, add the tomatoes and cook on high heat for 2 mns.Then add the chopped garlic and cook for 2 extra mns, tossing them. Remove and set aside. Mix together the egg and the goat cheese. Work to get a homogeneous consistency.Add the chopped parsley and sage. Season with salt and pepper. Turn down the oven temperature to 350 F. Spread the mustard on top of the tart and then spread the egg/cheese mixture over.Arrange the tomatoes on top and cook the tart in the oven for 30 mns. Remove and let cool before adding the sliced olives and the chopped mint. Dry roast the pine nuts and sprinkle them on top. Eat the tart hot or warm.

Frito Pie Recipe

Ground beef, lean, 16 oz
Onions, raw, .5 cup, chopped
Fritos Scoops Corn Chips, 16 oz
Chili powder, 2 tbsp
Catsup, low sodium, .5 cup
Cinnamon, ground, 1 tbsp
Pepper, red or cayenne, .5 tsp
Cumin seed, 1 tsp
Green Peppers (bell peppers), .5 cup, strips
Cheddar Cheese, 1 cup, shredded
1 Can corn optional

Frito Pie Recipe Preparation
Brown ground beef. Drain and add onion and peppers, continue to brown lightly. Add remaining ingredients, stir, and simmer for 30 minutes (until fritos absorb liquid). Top with additional cheese and sour cream if desiredServing size = 1 cup

Alternatives

1 Can corn: will give it a sweet crunch

chicken or turkey may be substituted for ground beef

Top with Bacon over the cheddar cheese to give it a southwest flavor

Use "Chile Con Carne with Beans" to spice up the recipe.

Top over lettuce to make a healthy salad

Create alternate layers of the ingredients to make a casserole, add extra cheeseand bake for 25 minutes at 375 degrees Shepherds Pie

Tamale Pie

This quick and easy tamale pie recipe is a fantasic alternative to traditional quiches. For vegitarians,replace the beef with Morning Star Farms Grillers Recipe Crumbles, or leave out altogether.

½ lb ground beef
½ cup onion, minced
2 tsp garlic powder
8 oz can of tomato sauce
½ c milk
1 egg, beaten
6 oz can of corn
¼ c of black olives, sliced
½ c of yellow cornmeal
1 tsp chili powder
1 tsp salt

Preheat oven to 350. Cook beef and onion with garlic powder. Combine tomato sauce, milk, egg, corn, olives, cornmeal, chili powder and salt. Pour into meat and mix well. Spoon into 8x8 baking pan. Bake for 40 to 45 minutes or until a knife comes out clean, when inserted. Cut into squares.
