Banana Cream Pie Recipe

1 9-inch pie shell, baked
3 cups whole milk
3/4 cup white sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
3 egg yolk, slightly beaten
2 tablespoons butter
1 teaspoon vanilla
3 bananas

Have baked 9-inch pie shell ready. In a large saucepan, scald the milk. In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk. Over medium heat, stirring constantly, cook until thickened. Cover and, stirring occasionally, cook for two minutes longer. In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks; when thoroughly combined, stir yolks into hot mixture. Cook for one minute longer, stirring constantly. Remove from heat and blend in the butter and vanilla. Let sit until lukewarm. When ready to pour, slice bananas and scatter in pie shell; pour warm mixture over bananas. If desired, make a meringue (you'll have 3 leftover egg whites) to top the pie, or just let the pie cool until serving.

Chess Pie Recipe

This is by far one of the easiest of these decadent pie recipes, the crust is made with the pie and it is delicious.

1 c. sugar
1/4 c. melted butter
1/4 c. milk
3 eggs
1 tsp. vanilla
1 tbsp. cornmeal

Preheat oven to 425°F. In a bowl, combine shortening, 1 cup of flour and salt using a fork or pastry blender. Combine the remaining flour with the 2 ½ tbsp of water into a paste. Mix the paste into the flour mixture with a fork or pastry blender. Cut the dough hanging over edge of pie plate with a small, sharp knife or kitchen scissors, leaving 1 inch around. Pierce the bottom and sides of pastry with a fork to prevent bubbles. Bake in a 425°F oven for 10 to 12 minutes until the crust is golden brown. Preheat the oven to 350 degrees. Whisk all ingredients together. Quickly pour into pie shell. Bake for 45 minutes.

Key Lime Pie

These decadent pie recipes are easy to make, like this key lime pie recipe. It will be the grand finale to any meal. This is particularly popular when coupled with seafood meals.

Crust:

1 1/2 c. graham cracker crumbs
6 tbsp. unsalted butter, melted
2 tablespoons sugar (optional)

Filling:

4 large egg yolks
1 (14-oz) can sweetened condensed milk
1/2 cup plus 2 tablespoons fresh or bottled Key lime juice

For topping:

3/4 cup chilled heavy cream
Note: For a time and calorie-saving technique, use Sugar Free Whipped Cream with thinly sliced limes as garnish.

Instructions:

Preheat oven to 350°F. Place graham crackers in a large ziplock bag. Crush with the palm of your hand or a rolling pin. Stir together graham cracker crumbs, sugar (optional), and melted butter in a bowl with a whisk or fork until the mixture sticks together when pressed. Press mixture evenly onto a 9-in glass pie plate, starting at the bottom and working up to the sides. Place crust on the center rack of the oven and bake for 10 minutes. When done- set the crust aside but leave the oven at 350°F. Whisk just the egg yolks and condensed milk in a bowl until smooth. Add lime juice and whisk until fully incorporated. Pour filling into cooled crust and bake for 25 minutes. When completely cooled- place the pie in the refrigerator for at least 6 hours while the filling sets. Don't make the topping until you are ready to serve the pie. Whisk or beat cream in a bowl until it just holds stiff peaks. Spread over the top and serve.
